Ingredients

2 cups all-purpose flour 1 tsp baking soda 1/4 tsp salt 1/2 tsp ground cinnamon 8 tbsp unsalted butter (softened) 3/4 cup packed brown sugar 2 large eggs 1/3 cup plain yoghurt or sour cream 2 cups mashed bananas (about 4 ripe bananas) 1 tsp pure vanilla extract Optional: 3/4 cup chopped pecans or walnuts

Step 1

Preheat the oven to 177°C and grease a 9×5-inch loaf pan. Whisk together flour, baking soda, salt, and cinnamon in a bowl.

Beat softened butter and brown sugar until smooth and creamy.

Add eggs one by one, then mix in yoghurt, mashed bananas, and vanilla extract.

Slowly combine dry ingredients with the wet mixture until fully incorporated.

Pour the batter into the pan and bake for 60-65 minutes. Cover loosely with foil halfway through. Serve with a cup of hot coffee or tea.
