The Punjabi street food samosa is a popular Indian snack. But if you want a more royal snack, instead of the traditional aloo filling, add paneer, dry fruits, and nuts to make shahi samosa for the evening.
For the Dough: 2 cups maida ¾ cup water ¼ cup ghee 1 teaspoon carom seeds Salt to taste
For the Filling: 2 boiled potatoes ¼ cup green peas 100 grams paneer 10-12 cashews 1 tablespoon raisins 2-3 tablespoons chopped cilantro 1 inch ginger ½ teaspoon coriander powder Pinch of red chilli powder Pinch of amchur powder ¼ teaspoon garam masala Salt to taste Oil for frying
Mix maida, ghee, carom seeds, and salt. Gradually add water to make a stiff dough. Set aside.
Saute cumin seeds, ginger, and green chillies. Add green peas, coriander powder, red chilli powder, amchur powder, and garam masala.
Mix in paneer, mashed potatoes, chopped cashews, and raisins. Season with salt and cook for 5-10 minutes.
Divide the dough into balls. Roll each ball into a thin circle and cut the circles in half.
Add a spoonful of filling in the semi-circle and cover with the other half to make a pyramid. Seal the edges with water.
Deep-fry the samosa till crispy. Serve with imli or pudina chutney.
