Pesto is a traditional Italian sauce known for its vibrant green colour that originated in Genoa. It is mainly used for flavouring spaghetti and comes together fairly quickly.
2 cups of basil leaves 1/2 cup Parmesan cheese 1/2 cup extra virgin olive oil 1/3 cup pine nuts 3 garlic cloves Salt and freshly ground black pepper to taste
In a food processor, pulse garlic, pine nuts, and basil leaves together. Until chopped coarsely, pulse.
Pulse to mix after adding the Parmesan cheese.
As the processor operates, gradually add the olive oil in a continuous stream until the mixture becomes smooth.
Add pepper and salt according to taste. Utilise it right away or keep it refrigerated for up to a week.
