Gujarati patra is a delicious snack recipe made using arbi leaves. It is a non-fried delicacy that you can relish in summer when you don’t feel like eating heavy meals. It takes less than an hour to prepare if you follow this recipe.
1.5 cups besan 1 tablespoon ginger-garlic paste 1 teaspoon mustard seeds Salt to taste 3 tablespoons tamarind pulp 1 tablespoon red chilli powder ½ teaspoon cumin seeds 3 tablespoons jagger 1 sprig of curry leaves 1 teaspoon turmeric powder 2 tablespoons sesame seeds Salt to taste Water and oil as required
Mix gram flour, water, red chilli powder, tamarind pulp, salt to taste, ginger-garlic paste, jaggery, and turmeric powder in a bowl.
Remove the thick stalk from arbi leaves and generously spread the batter all over them.
Roll the leaves tight so that they do not leak the gram flour mixture.
Steam the leaves for at least 30 minutes. Let them cool off and cut them into pieces.
In a pan, heat a tablespoon of oil and add mustard seeds, cumin seeds, curry leaves, and sesame seeds.
Add the arbi rolls to this mixture and saute them. Once the rolls turn golden, serve them hot.
