Made from sorrel leaves, Gongura pachadi (chutney) or pickle is quite famous in Andhra Pradesh. When served with a hot cup of rice, it makes a simple but comfortable meal that will satisfy your hunger and satiate your craving with just a bite.
200 grams of red chillies 1 tsp mustard seeds 3 cups gongura leaves 8-10 garlic cloves ½ cup sesame oil 1 tsp fenugreek seeds Rock salt to taste
Cut the stems of sorrel leaves and clean them thoroughly under running water. Keep them on a paper towel and dry them for a day.
Use a thick bottom pan to dry roast leaves until you witness them achieve a dark green or brown hue. Cool them on a plate.
Grind the leaves with salt to make a smooth powder and keep it aside in a bowl.

Heat oil in the same pan and add fenugreek and mustard seeds to it. Add dry red chillies and salt. Grind the spices into a smooth powder.
Heat some sesame oil in the pan and roast garlic pods. Meanwhile, combine sorrel and spice mixtures.
Add garlic to the gongura pachadi along with oil. Keep it in an airtight container and serve with hot rice.
