Amritsari kulcha is crisp as well as soft leavened bread which is stuffed with boiled and mashed potatoes and spices. Here is an easy recipe to make Amritsari kulcha at home.

For the dough: 1 kg refined flour, 400 ml water,a pinch of salt, 100 ml canola oil For the filling: 1 cup onion, 1/2 kg potatoes (boiled and crushed), 2 tsp coriander seeds (crushed), 2 tsp ginger, 2-3 green coriander sprigs, 1 green chilli, 1 tbsp anaar dana seed (crushed), lemon juice

Make a semi-firm dough with the given ingredients and cover it with moist cloth for 1 hour. Combine all filling ingredients, except canola oil, and gently fold together.

Now make small balls from dough and pack it with filling just enough to stuff and encase well. With a rolling pin, flatten its wedges.

In a medium-hot, non-stick pan, brush wedges with canola oil and cook evenly on both sides. Serve the kulcha with coriander-mint chutney or curd.
