Coffee cake is a simple yet comforting cake that can be eaten for breakfast, brunch, evening snack, or even as a light dessert. To make a spongy coffee cake with a delicious topping, follow this recipe.
For the cake: Maida - 2 cups Milk - 1/4 cup Sour cream - 1 cup Eggs - 3 Powdered sugar - 1 cup Butter - 3/4 cup Baking powder - 2 teaspoons Baking soda - 1/2 teaspoon Salt - 1/2 teaspoon Vanilla extract - 1 tablespoon For the streusel topping: Brown sugar - 3/4 cup Maida - 1.5 cups Cinnamon - 2 teaspoons Butter - 10 tablespoons
Start by making the streusel topping by mixing sugar, maida, cinnamon and butter. Once uniform, set it aside.
To make the cake batter, mix in the dry ingredients like maida, baking powder, baking soda, and salt.
In another bowl, mix the wet ingredients like cream, milk, butter, eggs, vanilla extract, and sugar.
Carefully mix the dry and wet ingredients together till you get a consistent batter.
Pour the batter into a pan and top it with prepared streusel topping.
Bake for about an hour, wait for it to cool down, and then enjoy your soft coffee cake.
