With its soft jelly-like interior, Burnt Basque Cheesecake is the more luxurious version of the popular dessert. But it's actually pretty easy to make yourself! Just follow this simple recipe and savour this delicious treat.
600 gm cream cheese, softened 200 gm granulated sugar 4 large eggs 400 ml heavy cream 20 gm all-purpose flour 1 tsp vanilla extract Butter for greasing the pan
Preheat your oven to 200°C (180°C for fan ovens). Grease a 9-inch springform cake tin with butter and line the bottom with parchment paper.
In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar to the cream cheese and continue to beat until well combined.
One at a time, add the eggs, beating well after each addition. Ensure the mixture is smooth before adding the next egg.
Gradually add the heavy cream while continuously beating the mixture. Sift in the flour and mix until just combined. Be careful not to overmix.
Stir in the vanilla extract to enhance the flavour. Pour the batter into the prepared cake tin. Tap the tin on the counter a few times to release any air bubbles.
Bake in the preheated oven for about 50-60 minutes or until the top is golden brown and the centre is set.
Allow the cheesecake to cool in the tin for at least 30 minutes before transferring it to a wire rack to cool completely. Once cooled, refrigerate the cheesecake for a few hours or overnight before serving.
