Chikki is a traditional Indian snack made with jaggery and nuts or seeds. Making chikki for Makar Sankranti is a delightful tradition. The crunchy, sweet brittle symbolises the season’s warmth.This simple recipe will guide you to make delicious peanut chikki at home with minimal ingredients.
1 cup peanuts (roasted and skin removed) 3/4 cup jaggery (grated or broken into small pieces) 1 tbsp ghee (clarified butter) 1/4 tsp cardamom powder
Roast the peanuts on medium heat until they turn golden and aromatic. Remove the skin by rubbing them between your palms. Break them into halves if desired.
Lightly grease a flat surface (like a steel plate or countertop) and a rolling pin with ghee to prevent sticking.
In a heavy-bottomed pan, heat the ghee and add jaggery. Stir continuously on low heat until the jaggery melts and forms a smooth syrup.
Drop a small amount of syrup into cold water. If it hardens immediately and snaps when broken, it’s ready.
Quickly mix the roasted peanuts into the syrup. Stir well to coat evenly. Pour the mixture onto the greased surface and spread it out using the rolling pin.
While still warm, cut the chikki into squares or rectangles. Let it cool completely before serving.
