While Khichadi is an important part of the Makar Sankranti celebration, make it with a delectable twist! Enhance your festivities with a wholesome Palak Khichadi that embodies the essence of the harvest season.

1 cup rice ½ cup split yellow moong dal Fresh spinach leaves (chopped) 1 onion (finely chopped) 2 tomatoes (diced) 1 tsp cumin seeds ½ tsp turmeric powder Ghee for tempering Salt to taste
Cook rice and moong dal together.
In a pan, sauté cumin seeds, onions, and tomatoes in ghee. Add chopped spinach, turmeric, and salt. Cook until spinach wilts.
Mix the sautéed mixture with cooked rice and dal.
Serve hot, embracing the flavours of Makar Sankranti.
