Dudh Puli, a classic Bengali dessert, is a rich milk-based pudding featuring rice flour dumplings stuffed with sweet coconut. Known for its slow-cooked milk and distinctive dumplings, this dish combines the creaminess of milk with the sweetness of Date Palm Jaggery.

2 liters Full Cream Milk 200g Rice Flour 2 Tbsp. Semolina (for binding) 2 cups Grated Coconut 800g Patali Gur/ Date Palm Jaggery (broken into chunks)

Cook grated coconut in a pan until dry.

Add ⅓ of the Gur and cook until it's melted and the mix is thick.

Keep stirring, then cool it down.

Make a soft dough with rice flour, semolina, and hot water.

Make 20 balls from the dough, flatten them, and put 1 Tbsp. of coconut mix in the middle.

Fold to make a half-moon shape.

Boil milk and water until the milk is reduced.

Dissolve the rest of the Gur in a cup of this milk, then mix it back into the boiling milk.

Add the Pulis and cook until the milk is thick.

Turn off the heat and let it sit for at least an hour. It's best served after 8 hours.
