This simple but healthy rice dish is a complete meal in itself. Made with green moong and other staple veggies, it comes together in one pot for a no-fuss meal.

2 tablespoons of oil 3 bay leaves (tejpatta) 3 cloves 5 peppercorns ¼ inch cinnamon 1 cardamom (elaichi) 2 to 3 onions, finely chopped ½ tablespoon of ginger garlic paste

tomato, diced 3 whole green chillies 1 and ½ cups of sprouted moong 1 cup of rice Salt to taste Red chilli powder ½ tablespoon of biryani masala 2 spoonfuls of ghee

In a large, heavy-bottomed pan or pressure cooker, heat the oil over medium heat.

Add bay leaves, cloves, peppercorns, cinnamon, and cardamom to the hot oil and let the splutter.

Add the finely chopped onions and ginger-garlic paste to the pan.

Sauté them until the onions turn golden then add in the tomatoes and whole green chillies.

Add red chilli powder, biryani masala, and salt. Mix well and cook for a few more minutes.

Add the rice and moong and stir gently to combine everything evenly

Pour in enough water to cover the rice and moong mixture and pressure cook for 2 whistles.

Serve hot for with a drizzle of ghee.
