Kothimbir Vadi is a popular Maharashtrian snack made from fresh coriander leaves (kothimbir) and chickpea flour (besan). It is steamed and then shallow-fried to create a crispy, flavourful treat perfect for a rainy evening.
1 cup chickpea flour (besan) 2 cups fresh coriander leaves 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp cumin seeds 1 tsp sesame seeds 1/2 tsp baking soda 1 tsp ginger-garlic paste 2 green chilies, finely chopped 1 tbsp lemon juice Salt Water Oil
In a bowl, combine the chickpea flour, chopped coriander leaves, turmeric powder, red chilli powder, cumin seeds, sesame seeds, baking soda, ginger-garlic paste, green chilies, lemon juice, and salt.
Gradually add water to the mixture, stirring continuously to form a thick batter. The consistency should be such that it holds together when pressed.
Grease a steaming tray or a flat plate with oil and set up a steamer with enough water. Pour the batter and spread it evenly.
Steam the batter for about 15–20 minutes. Allow the steamed batter to cool slightly. Once cooled, cut it into small squares or diamond-shaped pieces.
In a pan, heat some oil and add the steamed pieces and fry.
Remove the vadi from the oil and place them on a paper towel to drain any excess oil.
