Maharashtrian Zunka: Make This Spicy Gram Flour Sabzi For Lunch

A popular besan dish that is typically paired with bhakri or rotis, the zunka is a delicious pantry recipe to make when you’ve run out of ingredients to cook with, in the fridge. Pair with hot rotis, bajra bhakri or tandoori naan for a delicious and quick lunch.

INGREDIENTS

½ cup besan 2 small onions, finely chopped 7-8 cloves garlic, smashed 2 green chillies, finely chopped 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1 teaspoon red chilli powder ½ teaspoon turmeric powder ¼ cup fresh coriander 2 tablespoons vegetable oil 1 cup water Salt, to taste

STEP 1

Heat the oil in a pan and allow the mustard and cumin seeds to splutter.

STEP 2

Once it begins to pop, add the green chillies and garlic to cook for a couple of minutes.

STEP 3

Add the chopped onions and cook for another couple of minutes, before you add the red chilli and turmeric powder.

STEP 4

Add the besan and toss it in the aromatic mixture for 2-3 minutes, before gradually pouring the water in and constantly mixing.

STEP 5

Ensure that there are no lumps in the mixture while stirring and allow it to thicken slightly before seasoning it with salt.

STEP 6

Continue to stir the mixture until it comes off the sides of your pan and forms a coarse, dry mixture. Serve hot.
