A one-pot delicacy of lightly seasoned dal, the Maharashtrian-style varan is a simple preparation to be enjoyed with rice and ghee. Recreate this at home when you’re running short of time or are craving a simple, no-frills meal for lunch or dinner.
½ cup toor dal, soaked 2 cups water 1 teaspoon turmeric powder 1 teaspoon mustard seeds 1 teaspoon cumin seeds 2 green chillies, slit lengthwise 5-6 curry leaves 1 pinch asafoetida 2 tablespoons ghee Salt, to taste
Add the moong dal to a pressure cooker along with the water, salt and turmeric powder.
Cook the lentils for 6-7 whistles over medium flame and allow it to cool slightly.
For the tempering, heat ghee in a pan and allow the asafoetida to bloom.
Add the remaining ingredients and pour the tempering over the cooked lentils once it splutters.
Serve warm along with rice, thecha and papad.
