Vada pav is a popular Indian street food, perfect for the monsoon season. This delicious snack features spicy batata vada sandwiched between soft pav buns, served with tangy chutneys.
4 large potatoes, boiled and mashed 1 cup gram flour (besan) 4 pav buns 3 green chillies, finely chopped 1-inch ginger, grated 5 garlic cloves, minced 1 tsp mustard seeds ¼ tsp turmeric powder Fresh coriander leaves, chopped Oil for fryingdipping sauce
Heat oil in a pan, add mustard seeds, ginger, garlic, and green chillies. Saute well.
Add turmeric powder, mashed potatoes, coriander and salt. Mix well.
Let the mixture cool and shape into small balls.
In a bowl, mix besan, salt, and water to make a smooth batter.
Heat oil in a pan. Dip each potato ball into the batter, and fry until golden brown. Drain on napkins.
Slice the pav buns and lightly toast, place a fried vada between each pav bun.
Serve hot with green chutney, dry garlic chutney and chillies.
