Maharashtrian Sabudana Khichadi is perfect for fasting because of its light and easily digestible nature. Made from tapioca pearls, it has essential carbohydrates for energy, while peanuts offer protein. It is also delicious and easy to make.
1 cup sabudana (tapioca pearls) 2 potatoes 1/2 cup roasted peanuts 2-3 green chilies 1 tsp cumin seeds 8-10 curry leaves 2 tbsp ghee 1 tsp sugar 2 tbsp fresh coriander leaves 1 tbsp lemon juice Grated coconut Salt
Rinse the sabudana under running water until the water runs clear to remove excess starch. Soak the sabudana in water just enough to cover them for about 4-6 hours or overnight.
Heat ghee or oil in a pan. Add cumin seeds and let them splutter. Add curry leaves and green chilies. Add the diced potatoes and cook until they are tender.

Add the soaked sabudana to the pan, ensuring to drain any excess water. Stir in the coarsely ground peanuts, salt, and sugar.
Cook the mixture on low to medium heat, stirring gently for about 5-7 minutes. Add lemon juice and mix well.
Turn off the heat and garnish with fresh coriander leaves and grated coconut.
