Maharashtrian-Style Poha Ready In 6 Easy Steps

Poha is a light and flavourful Indian breakfast made with flattened rice, sautéed potatoes, and aromatic spices. It’s garnished with fresh coriander and a squeeze of lemon, and has a perfect balance of taste, texture, and nutrition.

Ingredients

2 cups fllattened rice (poha) 1 medium potato 1 medium onion 2 green chillies 6-8 curry leaves 1 tsp mustard seeds – 1 tsp ½ tsp turmeric powder 1 tsp sugar Salt 2 tbsp peanuts Lemon juice coriander leaves oil

Step 1

Rinse poha under running water in a colander until it softens. Let it drain completely. Add turmeric, sugar, and salt to the poha. Mix gently and set aside.

Step 2

Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves, green chillies, and peanuts. Sauté for 1-2 minutes. Add diced potatoes and cook until tender, stirring occasionally.

Step 3

Add chopped onions to the pan and sauté until translucent.

Step 4

Add the prepared poha to the pan. Mix gently to combine with the potato mixture. Cover and cook on low heat for 2-3 minutes.

Turn off the heat. Add lemon juice and chopped coriander leaves. Mix well.

Serve hot, garnished with extra coriander and a wedge of lemon.
