One of the most creative ways to use up leftover rotis from lunch, the flavoursome preparation is sure to impress your tastebuds. Throw in an egg into the delicious spice mixture to make it extra yummy and appetising.

3-4 leftover rotis 1 chopped onion 1 chopped tomato 2 tablespoons oil 1 teaspoon cumin seeds 1 teaspoon mustard seeds ½ teaspoon turmeric powder ½ teaspoon red chilli powder 2 green chillies, slit 4-5 curry leaves 1 tablespoon chopped coriander 1 tablespoon grated cheese Salt, to taste

Heat the oil in a kadhai and temper the cumin, mustard and curry leaves.

Add the green chillies, followed by the chopped onions and sauté for 2-3 minutes.

Add the chopped tomato and cook further for 4 minutes, until slightly mushy.

Add the spice powders and season with salt, while you tear the rotis into bite-sized pieces.

Throw in the torn rotis into the pan and mix thoroughly to combine.
