Masala Bhaat is a flavourful and fragrant rice dish from Maharashtra, made with a medley of vegetables and spices. It is perfect for special occasions or as a comfort food, truly Maharashtrian in taste. Here is how to make masala bhaat at home:
1 cup basmati rice 2 cups water 2 tsp ghee ½ tsp mustard seeds ½ tsp cumin seeds ¼ tsp asafoetida 8-10 curry leaves 2 green chillies 1 tsp ginger-garlic paste Mixed vegetables (carrot, peas, potato, cauliflower) 1½ tsp goda masala ½ tsp turmeric powder Salt according to taste Fresh coriander
Wash the rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
Heat ghee in a pressure cooker, add mustard seeds, cumin seeds, asafoetida, curry leaves, and green chillies. Sauté for a minute.
Add the ginger-garlic paste and mixed vegetables. Cook for 3-4 minutes.
Add goda masala, turmeric powder, salt, and the soaked rice. Mix well.
Add 2 cups of water, cover, and cook for 2 whistles. Let the pressure release naturally.
Fluff the rice with a fork, garnish it with fresh coriander, and enjoy your Masala Bhaat!
