Try this Kharvas recipe, a Maharashtrian-style traditional pudding that can be put together quickly with just three ingredients! This unique dessert is perfect to serve at any get-togethers.
Coconut - 1 Water - 1.5 cup Sugar - 5 tbsp Corn flour - 5 tbsp
Cut the coconut in half and remove the white fleshy part. Cut this into smaller pieces and add them to the grinder. Blend to shred the coconut finely.
Add around 1 and a half cups of lukewarm water to the grinder. Blend again to form a thick paste. Strain the paste well to extract coconut milk. Alternatively, you can also use store-bought coconut milk.
Add sugar to the coconut milk. Add an equal quantity of cornflour and mix thoroughly to dissolve. Now place the vessel with milk on a stove on low flame.
Stir continuously to avoid lumps. Once the mixture has thickened a bit, remove it from heat. Grease a tin with ghee or butter and pour the milk mixture into it.
Allow it to cool for a few minutes at room temperature. Then refrigerate it for 2-3 hours and let it set. Turn the container upside down and carefully tap it to remove the pudding.
Garnish with coarse coconut powder, cut into pieces and serve.
