Also known as Kandyachyi Patichi Bhaji, this Maharashtrian dish is perfect for the autumn season and goes really well with whole wheat and jowar rotis. Crispy, savoury and sublime, this spring onion dish should be on your plate this autumn.

3 cups spring onions, chopped 2 green chillies, chopped ½ tsp turmeric powder 1 tsp red chilli powder ½ cup gram flour, dry roasted 2 tbsp oil ½ tsp mustard seeds ¼ tsp asafoetida Salt, to taste

Heat oil in a wok, then add mustard seeds and asafoetida. Let them splutter.
Now add the spring onions and green chillies. Mix well, then add salt, turmeric and red chilli powder.

Saute the spring onions with the spices for 10 minutes then add the roasted gram flour.

Mix well and cook on a low flame until done. Add a splash of water if the mix gets too dry.
Serve the spring onion bhaji while hot with roti and salad.
