If you love Rajasthani or Punjabi kadhi, you must try Maharashtrian Pitla (pithla). It is a creamy besan curry recipe with tangy flavours that gel with bland roti or aromatic rice. Here is a quick recipe to try out.
2-3 garlic cloves 1 cup gram flour 1 tsp cumin seeds 1 tsp turmeric powder 1-inch ginger 4 cups water 1 slit green chilli 1 tsp red chilli powder 2 tsp coriander powder 1 sliced onion Salt to taste
While you heat the kadhai, blend garlic, green chillies, and ginger into a smooth paste.
Add cumin seeds and ginger-garlic paste to hot oil. Saute for a minute and add onions to it.
Add ground spices and roast them with onions for two minutes.
Add gram flour or besan to the kadhai and roast for a couple of minutes. Add water and mix continuously.
Once the mixture turns smooth, turn the flame low and put the lid on. After simmering for 10 minutes, switch off the flame.
Garnish with fresh coriander leaves and serve hot with roti and rice.
