A filling and refreshing lentil side, this koshimbir is a delightful interplay of textures and flavours that are simple and makes one feel at home.
½ cup yellow moong dal 2 tablespoons raw peanuts 1 teaspoon sugar 2 teaspoons ghee 1 teaspoon cumin seeds 2 green chillies, chopped Juice of 1 lemon 2 tablespoons chopped coriander 3 tablespoons freshly grated coconut Salt to taste
Wash and soak the moong dal in water for 30 minutes. Drain and rinse a couple of times. Soak the peanuts in hot water for 20 minutes and drain. Combine the moong dal and peanuts in a bowl.
Heat some ghee in a pan and temper the cumin seeds and chillies. Add it to the bowl containing the soaked lentils.
Add the salt, sugar, lemon juice, grated coconut and coriander. Mix well to combine and serve.
