A quick and nutrition-packed, spicy sprouts curry – the usal is perfect to eat with rotis or rice, to meet your plant-based protein needs for the day.
250 grams moong sprouts 1 onion, chopped 2 tomatoes, chopped 1 tablespoon ginger-garlic paste 1 teaspoon mustard seeds 1 teaspoon cumin seeds ½ teaspoon asafoetida 1 teaspoon red chilli powder 1 teaspoon turmeric powder ½ teaspoon garam masala 1 tablespoon ghee Juice of ½ lemon 2 tablespoons grated coconut
Heat the ghee in a pressure cooker and let the asafoetida bloom.
Add the mustard and cumin seeds to let them splutter, before adding the chopped onions.
Sautee for a couple of minutes and add the ginger-garlic paste as well as the tomatoes.
Cook the mixture until the tomatoes are slightly softened before adding in all the spice powders.
Add the moong sprouts and half a cup of water to bring to a boil.
Reduce the heat and season with salt and lemon juice.
Pressure cook for 1-2 whistles on a medium-high flame and serve hot with rotis or rice.
