Maharashtrian Masale Bhaat: A Delicious One-Pot Meal For Lunch

This is a traditional spicy dish from Marathi cuisine which is made with a medley of vegetables and hot spice mix. Here is an easy recipe to make masale bhaat at home:

Ingredients

2 tbsp ghee, 1 tsp cumin seeds, 1 small cinnamon stick, 2 cardamom crushed, 15 cashewnuts, 1 tbsp ginger, 6 garlic cloves, 2 green chillies, 10 curry leaves, 1 tbsp coriander powder, 1 tsp turmeric powder, 1 tsp garam masala powder, 1 cup rice, 1 cup peas, salt to taste, 1 tsp sugar, 2.5 cup water, 1 tsp lemon juice, coriander leaves for garnishing

Step 1

Add ghee to a saucepan and heat it up. Add in the ingredients from cumin seeds to curry leaves and let it sauté for a min. Add in the spice powders and mix well.

Step 2

Saute for 30 secs. Add in rice and toss well with the masala and ghee. Add in peas, salt, sugar and mix well. Now pour water and bring it to a boil.

Step 3

Then cover and let it simmer for 15 to 20 mins until the rice is cooked. Now squeeze some lemon juice over and sprinkle with cilantro. Enjoy with yoghurt.
