Prepared with sprouted horsegram, tamarind and mild spices, this intensely umami soup from Maharashtra can heal monsoon coughs and colds. Here’s the recipe for you.
2 cups sprouted horsegram 2 tbsp tamarind pulp 4-5 cups water 1 tsp oil 1 tsp cumin seeds ¼ tsp asafoetida 1 sprig curry leaves 2 dry red chilli 4 garlic cloves, chopped 1 tsp jaggery powder Salt, to taste
Place the sprouted horsegram in a cooker with the water and salt, and pressure cook for 3-4 whistles.
Strain the horsegram liquid into a large bowl and use the boiled horsegram in dal, curry or salad.
Heat oil in a pan, then add cumin seeds, asafoetida, curry leaves, dry red chillies and garlic.
Saute for a few minutes, then add the horsegram liquid, tamarind pulp, jaggery and adjust the salt.
Mix well and cook for 5 minutes, then serve hot as a soup or beverage.
