Made with gram flour, coriander leaves, peanuts and spices, it is a popular tea-time snack in Maharashtra. Here is a simple recipe to prepare kothimbir vadi at home.
1 bunch fresh coriander (chopped), 1 tbsp besan, 1 tbsp garlic and green chilli paste, 2-3 tbsp sesame seeds, 1 tsp rice flour, 1/2 tsp turmeric powder, 1 tsp red chilli powder, 1/2 tsp black pepper, 1-2 cup oil, 1/2 cup water, salt as required
Take a bowl, add coriander, besan, rice flour, turmeric, red chilli powder, garlic & green chilli paste, sesame seeds, black pepper powder, salt, oil, water and mix well.
Make soft sticky dough out of it. Transfer to a tray and level it up. Put the tray in a steamer and steam it for about 10-12 mins.
Remove from the steamer and let it cool down. Once it comes to room temperature, cut it to a desired shape. Deep fry them for 1-2 mins and enjoy.
