Maharashtrian kanda poha is a delicious and nutritious breakfast that is a must-have whether you live there or not. It is easy to make, lightweight, and also healthy for people trying to manage sugar. Try this recipe.
2 cups poha 2 tbsp peanuts 1 tsp mustard seeds ¼ tsp cumin seeds 1 tbsp oil 5-6 curry leaves 1 chopped onion 1 chopped green chilli 1 chopped potato ½ tsp turmeric Salt to taste 2 tbsp coriander leaves 1 tbsp lemon juice
Soak poha in water so that it softens. Dry roast peanuts in a saucepan.
Heat oil in the same pan and add mustard and cumin seeds to it.
Saute green chillies, curry leaves, and onions.
Add potatoes and turmeric. Let the ingredients cook until the potatoes soften.
Add poha, sprinkle water, and cover the lid. Toss the ingredients after 5 minutes.
Sprinkle salt on the top and garnish the poha with coriander leaves and lemon juice.
