Maharashtrian Kadhi is a traditional Indian dish known for its creamy, tangy, and mildly spiced yoghurt-based gravy. This delightful delicacy is a perfect blend of flavours and textures, making it a popular choice for a light, healthy dinner.
1 tbsp Besan 1 cup Sour Curd 8-10 fresh Curry Leaves 1 tbsp Minced Ginger 1 tbsp Minced Garlic 1 tsp Mustard Seeds ½ tsp Turmeric Powder 2-3 Green Chillies, finely chopped Salt to taste Water as needed Red Chilli Powder to taste 1 tbsp Oil A pinch of Asafoetida
In a medium-sized bowl, combine Besan and yoghurt, making a smooth paste.
Gradually add water and whisk to achieve a lump-free, smooth consistency.
Heat oil in a heavy-bottomed pot. Add mustard seeds and curry leaves, allowing the seeds to crackle.
Add grated ginger, grated garlic, and green chilli. Sauté for 1-2 minutes on medium heat
Pour in the yoghurt-besan mixture, bringing it to a boil over medium heat. Stir occasionally to prevent sticking.
Once it boils, add turmeric powder and salt. Simmer for at least 10 minutes to thoroughly cook the gram flour. Turn off the heat and garnish with coriander. Serve hot.
