Maharashtrian Goda masala is the secret of every regional delight. It infuses the savoury dishes with flavours and amplifies their taste by leaps and bounds. Here is a quick recipe for you to try at home.

Ingredients

6 tbsp desiccated coconut 2 tsp shahi jeera & cumin seeds 8 tbsp coriander seeds ½ tsp poppy seeds & peppercorn 3 tbsp stone flower 7 tbsp white sesame seeds 1 cinnamon stick 5-6 green cardamoms 3-4 star anise 2 tbsp oil 20-25 cloves 5-6 tej patta 4 black cardamoms 1.5 tsp turmeric powder ¼ tsp asafoetida 4-5 dry red chillies 1 tsp saffron 3 tsp niger seeds Salt to taste

Step 1

Heat oil in a pan and roast coriander seeds until they change their colour.

Step 2

Roast both kinds of cumin seeds first and add niger seeds later.

Step 3

Toast sesame seeds with the ingredients, and keep this mixture aside.

Step 4

Roast coconut until it turns brown and keep aside on a separate plate.

Step 5

Dry roast all the remaining spices in a skillet along with whole and fragrant herbs.

Step 6

Once the ingredients have cooled off, blend them along with salt, and store the spice mixture in an airtight jar.
