When in doubt, always serve chivda for snacks in the summer. It is a healthy snack made of flattened rice. Not only is it delicious but also lightweight and easy to digest, making it perfect for beating your hunger pangs without making you feel heavy. Try the Maharashtrian chivda recipe.
¾ cup peanuts 3 cup poha ½ cup almonds and cashews 4 tablespoons oil ½ cup dry coconut 15-20 curry leaves ½ cup fried gram 1 tablespoon sugar 2-3 green chillies 1 teaspoon red chilli powder 1 teaspoon turmeric powder Salt to taste
Remove impurities from flattened rice and roast it in a heavy bottom pan for about 5-8 minutes.
Add oil to the pan and shallow-fry peanuts and almonds in it. You can also add raisins to the recipe.
After dry fruits, shallow-fry coconut slices. They will turn brown and aromatic in just 5 minutes.
After removing the coconut, saute chopped green chillies and curry leaves. Add turmeric and red chilli powder as well.
Add gram into the pan and saute it. Once done, keep everything aside and let all the ingredients cool off.
Mix everything in a large bowl, add salt to taste, add more red chilli powder if needed, and store in an airtight container.
