It doesn't matter who brought potatoes to India because Indian food today is incomplete without them. Its used across states proves how much people love the vegetable. If you can’t get enough of them, try Maharashtrian batatyachi bhaji or batata bhaji.
½ tsp cumin and mustard seeds 3 cups boiled potatoes 3 tbsp coriander leaves 7-8 curry leaves 1 tbsp chopped garlic 1 tsp turmeric powder 1 cup chopped onion Salt to taste 2 tbsp oil A pinch of asafoetida 2-3 slit green chillies
Wash potatoes and boil them with a pinch of salt and a teaspoon of oil. Keep aside and peel off.
Heat a pan, and add oil, cumin seeds, mustard seeds, green chillies, garlic, and curry leaves.
After sauteing the ingredients for a couple of minutes, add onions. Cook them until they are light brown.
Add the spices with a splash of water only if the pan seems dry.
Crumble potatoes with your hands and toss everything in the pan.
Garnish with coriander leaves and serve.
