Maddur vada is a popular type of vada which is widely cherished in the streets of Southern India. Made with rava and rice flour, the crispy fritter can be enjoyed with your chutney or sambar.
1 cup rice flour 1/2 cup rava 1/4 cup all-purpose flour 1 onion 1 green chilli A handful of coriander leaves 1 tablespoon sesame seeds 1 tablespoon roasted peanuts 1 teaspoon cumin seeds A pinch of asafoetida (hing) Salt to taste 2 tablespoons hot oil Water as required
Mix rice flour, rava, all-purpose flour, sesame seeds, peanuts, cumin seeds, hing, and salt.
Stir in the finely chopped onion, green chilli, and coriander leaves.
Heat some oil and pour over the dry mixture. Add water and knead a dough.
Take small portions of the dough and shape into patties. Deep-fry till crispy.
Arrange the crispy Maddur vadas and serve with your favourite chutney.
