Summers call for all the crafty twists to the traditional desserts. To beat this heat, here is the best recipe, “Lychee Shrikhand”. Now, end the classic Indian dessert and try out the amazing blend of lychee and shrikhand.
2 cups plain Greek yogurt 1 cup fresh or canned lychee fruit, peeled and pitted 1/2 cup powdered sugar 1 teaspoon cardamom powder 1/4 teaspoon saffron threads Chopped pistachios for garnish
In a large bowl take Greek yoghurt and whisk it until smooth.
Add powdered sugar, cardamom powder, and saffron threads, mix it well.
In a food processor or blender, puree the lychee fruit until smooth.
Gently fold the lychee puree into the yoghurt mixture until well combined.
Transfer the lychee shrikhand to a serving bowl and chill in the refrigerator for at least 2 hours.
Serve chilled, garnished with chopped pistachios.
