Stuffed, flaky parathas are the ultimate gastronomic experience and these simple green peas parathas are sure to become a lunchbox staple.
1 cup wheat flour ½ cup cooked green peas 1 teaspoon cumin seeds 1 teaspoon ginger-garlic paste 1 green chilli, chopped 2 tablespoons ghee Salt, to taste
Add the flour to a mixing bowl along with one tablespoon ghee and a pinch of salt before mixing well.
Add as much water is needed to make a soft but firm dough and set aside to rest for 20 minutes.
Meanwhile, grind the green peas into a coarse mixture using a blender jar.
Heat the remaining ghee and temper the cumin seeds, before sauteing the ginger-garlic paste until aromatic.
Add the ground peas mixture and season with salt. Let it cool before use.
Roll out a thick chapati using some of the dough and place the green peas mixture in the centre.
Fold the edges inwards and roll out into a paratha.
Cook on a hot griddle for 4-5 minutes on each side, until crispy. Apply ghee and serve hot.
