1 pumpkin 3 chopped garlic cloves 1 chopped red chilli 1 coconut milk or cream Lots of coriander leaves Salt and pepper
Cut pumpkin into quarters and scoop out the seeds. Remove the skin and chop the flesh into small chunks. Boil in water.
After the pumpkin has boiled well, drain water and add into the blender with spices. Blend well.
Add the mixture into a saucepan with coconut milk and let it cook on simmer. Also add the reserved cooking water.
When done, pour the soups in a large bowls. Add chopped coriander for garnish.
