Zucchini noodles, also known as "zoodles," are a fantastic low-carb and gluten-free alternative to traditional pasta. They're light, nutritious, and can be easily paired with a variety of sauces and toppings. Whether you're looking to cut down on carbs, add more vegetables to your diet, or simply try something new. Here's an easy recipe.
– 2 medium-sized zucchinis – 2 tablespoons olive oil – 2 cloves garlic, minced – 1/2 teaspoon red pepper flakes (optional) – Salt and pepper to taste – 1/4 cup grated Parmesan cheese (optional) – Fresh basil or parsley for garnish
Wash the zucchinis thoroughly. Using a spiralizer, julienne peeler, or a knife, cut the zucchini into noodle-like strips. If using a knife, slice the zucchini lengthwise into thin, flat strips, then cut those strips into thinner, noodle-like pieces.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, or until the garlic is fragrant and slightly golden.
Add the zucchini noodles to the skillet. Toss them gently to coat them in the garlic and oil. Cook for about 3-5 minutes, or until the noodles are tender but still slightly crisp. Be careful not to overcook them, as they can become mushy.
Season the zucchini noodles with salt and pepper to taste. If desired, sprinkle with grated Parmesan cheese and garnish with fresh basil or parsley.
