The tender sweetness of cooked crab meat, when combined with spices and aromatics, makes for a hearty meal for one or snack to share for two. Enjoy a healthier version of these crab cakes by baking them and eating with a creamy sriracha mayonnaise on the side.
1.5 cups cooked crab meat, de-shelled 1 egg 3 tablespoons mayonnaise ½ cup breadcrumbs 1 teaspoon red chilli flakes 1 spring onion, chopped 1 teaspoon dried oregano Juice of ½ lemon Salt and pepper, to taste 3 teaspoons olive oil
Combine the crabmeat, egg, chilli flakes and oregano in a bowl and mix well.
Add the remaining ingredients except the olive oil and combine to make a thick, chunky mixture.
Divide into equal portions and shape into thick patties to place on a baking sheet drizzled with olive oil.
Pour some more olive oil on top and bake in a preheated oven at 190°C for 10-12 minutes. Serve hot.
