Pithla bhakri or zunka bhakri is a simple and nourishing meal, popular in Maharashtrian regional cuisine. There are many different techniques of making this besan curry. Here are some varieties of pithla.
Almost curry-like in consistency, this pithla is made using besan flour and generous amounts of water. It is best enjoyed with aromatic mango blossom rice and papad.
Like the zunka, korda pithla is drier but has an almost paste-like consistency. It is usually made in a tempering of cumin, onions and curry leaves.
Besan flour cooked on a pan in a tempering of mustard and chillies, zunka is chunky in texture. It is best enjoyed with bhakri and a bowlful of curd.
Made from horse gram, this lesser-known variety of pithla is highly nutritious. Kulith flour and buttermilk are mixed together on a flame to make this pithla seasoned with stuffed, dried chillies.
A quick one-pot meal, bhatavarcha pithla is made by pouring a besan mix over semi-cooked rice which is steamed in the cooker. It is served with a tempering of red chillies, mustard and curry leaves.
