Golgappa, also known as Pani Puri or Puchka, is a popular street food in India that delights the taste buds with its burst of flavors. These crispy puris filled with spicy water and tangy chutney create a delightful culinary experience. Making golgappa pani at home allows you to customize the flavors to your liking, ensuring a fresh and hygienic treat. Here’s a simple recipe to prepare refreshing golgappa pani that will transport you to the bustling streets of India.

Ingredients

– 1 cup fresh mint leaves – 1/2 cup fresh coriander leaves – 2-3 green chilies (adjust to taste) – 1-2 tablespoons tamarind pulp (or 1 tablespoon tamarind concentrate) – 1 tablespoon roasted cumin powder – 1-2 tablespoons chaat masala (to taste) – 1-2 tablespoons sugar (adjust to taste) – Salt (to taste) – 4 cups cold water

Step 1

In a blender, combine the mint leaves, coriander leaves, green chilies, and a little water. Blend until smooth to form a paste. In a large mixing bowl, add the mint-coriander paste, tamarind pulp, roasted cumin powder, chaat masala, sugar, and salt. Mix well.

Gradually add cold water to the mixture, stirring continuously. Adjust the consistency according to your preference; you can add more water for a thinner pani or less for a thicker consistency.

Taste the pani and adjust the seasoning by adding more salt, sugar, or lemon juice as desired. The pani should be spicy, tangy, and refreshing. Refrigerate the golgappa pani for at least 30 minutes to enhance the flavors. Serve chilled.
