Ingredients

2 tbsp olive oil 1 onion 1 red bell pepper 3 garlic cloves 2 tsp ground cumin 1 tsp paprika 1/2 tsp cayenne pepper 800 gm crushed tomatoes Salt and pepper to taste 4-6 large eggs Fresh parsley

Step 1

Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until softened.

Step 2

Add garlic, cumin, paprika, and cayenne; cook for 1 minute. Stir in crushed tomatoes, salt, and pepper. Simmer for 10 minutes.
