One of the secret ingredients that goes inside the dal makhani is the spice mix. Apart from the regular powdered and whole spices in the kitchen, another flavoursome and aromatic powder mixture amplifies the flavours of your favourite dish. Here is the recipe.
½ tsp dry ginger powder 1 tbsp coriander seeds ¼ tsp nutmeg powder 4 dried red chillies ⅛ tsp hing ½ tsp black peppercorn ½ inch cinnamon stick 1 tsp amchur powder 1-star anise 1 tsp mace 1 bay leaf
Heat a heavy bottom pan and add whole spices to it.
Dry roast the herbs until they release the aroma.
Turn off the flame and keep them aside to cool off.
Add them to the blender and grind into a coarse powder.
Add powdered spices and blend again.
Store the dal makhani spice mixture in an airtight jar.
