Oi Kimchi or Cucumber Kimchi is a crunchy, spicy Korean side dish made with cucumbers, garlic, ginger and gochugaru. Whether served fresh or after fermentation, it adds a bold and zesty kick to any meal.
6 small cucumbers 1 tbsp salt 1 tbsp sugar 2 sliced green onions 1 tbsp minced garlic 1 tbsp minced ginger 1–2 tbsp gochugaru 1 tbsp soy/fish sauce 1 tsp sesame seeds, optional
Slice cucumbers, add salt and sugar to them and let them rest for 30 minutes. Rinse and drain excess water after that.
Mix garlic, ginger, gochugaru, fish sauce and green onions into the paste.
Coat the cucumber with the prepared paste.
Serve it fresh or ferment it for 1-2 days and store it in the fridge.
Garnish with sesame seeds and enjoy!
