A tasty treat is this coffee cake recipe. With a buttery crumble on top and a cinnamon swirl in the middle, it is moist and soft.
2½ cups plus 2 tablespoons all-purpose flour, spooned and leveled 1½ teaspoons baking powder 1½ teaspoons baking soda ¾ teaspoon sea salt ¾ cup unsalted butter 1½ cups cane sugar 3 large eggs 1½ teaspoons vanilla extract 1½ cups Greek yogurt
⅓ cup brown sugar ¼ cup cane sugar 1 teaspoon cinnamon Crumble Topping ⅔ cup all-purpose flour ⅓ cup brown sugar ¼ cup cane sugar 1 teaspoon cinnamon 5 tablespoons unsalted butter
Preheat the oven to 350°F and grease a baking dish. For the filling take a bowl, mix together the brown sugar, cane sugar, and cinnamon.
Now Make crumble topping In a bowl add flour, brown sugar, cane sugar, and cinnamon and butter.
Mix well until there is no dry flour remaining and the mixture is crumbly. Set it aside.
For cake take a bowl, whisk together the flour, baking powder, baking soda, and salt.
Now using an electric mixer, cream the butter. Add sugar and mix to combine. Add the eggs and Vanilla, then add yogurt and mix.
Now take the greased baking pan, Evenly spread half the batter at the bottom. Sprinkle with the filling.
Layer with the remaining batter evenly Sprinkle the crumble topping on top. Bake for around 45 to 50 minutes, serve and enjoy!
