Paratha to dal chawal, baingan ka bharta is a delightful addition to the spread. It is one of the few ways you can make any brinjal hater fall in love with the vegetable. It’s like a thick paste loaded with spices. Here is how to make it.
1 large brinjal 1 large onion 2 medium tomatoes 1-inch ginger 2 green chillies 3-4 garlic cloves 1.5 tsp coriander powder ½ tsp red chilli powder ½ tsp cumin seeds, turmeric ⅔ tsp garam masala Salt to taste 2 tbsp coriander leaves 2 tbsp mustard oil
Make cuts in the brinjal and stuff them with green chillies and garlic cloves.
Grease brinjal and tomatoes with mustard oil. Roast them on the stove until mushy.
Once chillies and garlic are half done, take them out and pound them with ginger and salt.
Heat oil in a pan and saute cumin seeds, turmeric, and onions.
Once onions are translucent, add ginger-garlic paste. Meanwhile, remove the skin of brinjal and tomatoes.
Add powdered spices and mashed tomatoes-brinjals to the pan. Cook until the bharta releases oil. Garnish it with coriander leaves and serve.
