Vegan and sugar-free sweet potato and banana cookie are a guilt-free delight that will not only become your most favourite dessert but also support your weight loss efforts. Here is the recipe.
1 cup cooked and mashed sweet potatoes 1 ripe banana, mashed 1 ½ cups oats ½ cup almond flour ¼ cup almond milk 2 tablespoons peanut butter 1 teaspoon vanilla extract 1 teaspoon cinnamon ½ teaspoon baking powder A pinch of salt
Preheat your oven to 175°C and line a baking sheet with parchment paper. In a mixing bowl, combine the sweet potatoes, banana, almond milk, butter, vanilla extract.
In a separate bowl, combine the oats, almond flour, cinnamon, baking powder, and salt. Add the dry ingredient to the wet ones to form a thick cookie dough.
Using a spoon, scoop out portions of the dough and shape them into cookie rounds. Place the cookies onto the prepared sheet and flatten each cookie.
Bake in the preheated oven for 15-18 minutes or until the edges turn golden brown. Once baked, remove the cookies from the oven and let them cool. They are ready!
