Bottle gourd or lauki is known to be an excellent vegetable to consume during the hot summer months, due to its hydrating properties as well as for being easy to digest. Pair this quick preparation with rotis or steamed rice and enjoy during a busy day.

INGREDIENTS

1 medium-sized bottle gourd, chopped 1 onion, chopped 2 tomatoes, diced 2 green chillies, chopped 1 teaspoon grated ginger 1 teaspoon cumin seeds 2 tablespoons ghee 1 teaspoon red chilli powder 1 teaspoon turmeric powder 1 teaspoon coriander powder 1 pinch asafoetida 1 cup water ½ teaspoon garam masala 2 tablespoons chopped coriander Salt, to taste

STEP 1

Heat the ghee in a pressure cooker and temper the cumin seeds along with the asafoetida.

STEP 2

Add the green chillies, ginger and onions to cook for 2-3 minutes, until translucent.

STEP 3

Add the spice powders and mix well to combine, before adding the tomatoes and some salt.

STEP 4

Cook the mixture until slightly mushy, before tossing in the chopped lauki to combine.

STEP 5

Adjust seasoning once you pour in the water and bring the mixture to a boil.

STEP 6

Place the lid and whistle on the pressure cooker and 3-4 whistles over medium flame before allowing it to rest for 10-15 minutes. Serve hot.
