Vegetarians looking for a hearty meal will like this cheesy take on a classic: roasted cauliflower with melted cheese.
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Brush your vegetable slices front and back with olive oil, and grated parm, and lots of seasonings.
You're gonna roast or air fry them until they're fork tender, then add on mozzarella to melt.
Return to the oven for a few minutes, until the cheese is melted and bubbly.
Garnish with fresh herbs if desired and serve hot.
