Looking For A Healthy Breakfast? Make Quinoa Upma

This hearty and healthy vegan dish is made with quinoa, veggies and vibrant seasonings. Here is the recipe to make it at home.

Ingredients

2 cups quinoa, 2 ½ cup water, 2 carrots, ¼ cup frozen peas, 1 strand curry leaves, 1 tsp grated ginger, 2 green chilies, 2 tbsp oil, 3 tbsp cashews, ½ tsp mustard seeds, ½ tsp urad dal, 1 tsp lemon juice, cilantro leaves

Step 1

Heat oil in a pan and fry the spices and chilies. Then add ginger and onions. When the onions turn transparent, add tomatoes.

Step 2

Now add the mixed vegetables and sauté them for a few minutes and add salt. Add quinoa and 3 cups water.

Step 3

Stir to have an even mixture. Place a lid and let it simmer on low flame. Switch off after 20 minutes and enjoy.
